Step-by-Step Instructions
  1. Preheat your grill to medium-high heat (about 375°F). Wash and peel the sweet potatoes, then slice them into ½-inch rounds. Toss in a large bowl with olive oil, smoked paprika, and sea salt until coated.
  2. Grill the sweet potato rounds on the grates for about 10–15 minutes, turning occasionally, until tender and with grill marks.
  3. Prepare the chipotle dressing by combining chipotle peppers in adobo sauce, Greek yogurt, lime juice, and minced garlic in a medium bowl. Whisk until smooth.
  4. Arrange the grilled sweet potatoes on a serving platter in a circular pattern, drizzle 2 tablespoons of chipotle dressing over the top.
  5. Scatter black beans, fresh corn, and mango salsa over the sweet potatoes, then sprinkle with pickled red onions and cilantro leaves.
  6. Drizzle additional chipotle dressing across the toppings, season with black pepper and sea salt. Serve immediately.
