- Preheat your grill to medium-high heat (about 375°F). Wash and peel the sweet potatoes, then slice them into ½-inch rounds. Toss in a large bowl with olive oil, smoked paprika, and sea salt until coated.

- Scatter black beans, fresh corn, and mango salsa over the sweet potatoes, then sprinkle with pickled red onions and cilantro leaves.
