- In a large mixing bowl, beat the unsalted butter, oil, light brown sugar, and honey together until smooth and creamy.
- Add an egg and vanilla extract to the mixture, blending until just incorporated.
- Gradually incorporate the sifted flour, baking soda, salt, and cinnamon, mixing until no flour streaks remain.
- Wrap the dough in plastic wrap and refrigerate for about 1.5 hours.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Shape dough into balls using about 3 tablespoons of dough for each cookie and place on baking sheet.
- Bake in the preheated oven for around 10 minutes until edges are set but centers are slightly underbaked.
- Remove from oven and sprinkle with fleur de sel while warm.
- Cool on wire rack before serving.
