Step-by-Step Instructions for Soft Funfetti Cookies
  1. Preheat your oven to 350°F (180°C) and prepare baking sheets by lining them with parchment paper.
  2. In a mixing bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of fine salt.
  3. Beat 1/2 cup of softened unsalted butter, 1/2 cup of granulated sugar, and 1/2 cup of powdered sugar on medium-low speed for about 4 minutes until pale and creamy.
  4. Add in 1 large egg and 1 teaspoon of pure vanilla extract to the mixture and blend until fully incorporated, about 1 minute.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low until just combined, then fold in 1 cup of funfetti sprinkles.
  6. Scoop out dough balls about 1.5 tablespoons each and space them 2 inches apart on the baking sheets.
  7. Bake for 11-12 minutes, watching for golden edges and soft centers.
