  • 1 cup Pumpkin Puree canned or homemade
  • 1/2 cup Vegan Butter softened
  • 3/4 cup Brown Sugar can substitute with coconut sugar or maple syrup
  • 1 teaspoon Vanilla Extract preferably pure
  • 1 1/2 cups All-Purpose Flour or gluten-free blend
  • 1 teaspoon Baking Powder ensure it's fresh
  • 1 teaspoon Cinnamon for flavor
  • 1 cup Non-Dairy Milk any plant-based milk preferred
For the Frosting
  • 2 cups Powdered Sugar sifted before use
  • 2-3 tablespoons Non-Dairy Milk to adjust creaminess
  • 1 teaspoon Cinnamon for flavor

Method
 

Preparation Steps
  1. In a large mixing bowl, combine pumpkin puree, softened vegan butter, brown sugar, and vanilla extract. Mix until smooth and creamy.
  2. In another bowl, whisk together all-purpose flour, baking powder, cinnamon, and a pinch of salt.
  3. Gradually add the dry ingredient mixture into the wet mixture, stirring gently until just combined.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop spoonfuls of cookie dough onto the sheet.
  5. Bake for about 10 minutes, until the edges are set and tops are slightly puffed. Cool on the baking sheet for about 5 minutes.
  6. To prepare frosting, combine powdered sugar, non-dairy milk, and cinnamon until smooth.
  7. Once cookies are cooled, frost each with the cinnamon frosting.
