- Preheat oven to 350°F (175°C). In a skillet, melt butter over medium heat. Add sliced sweet onions, salt, black pepper, and optional sugar. Sauté for about 15 minutes until soft and lightly golden.
- Remove skillet from heat, let cool slightly. Stir in sour cream and eggs until smooth. Fold in half of the sharp cheddar and mozzarella cheese.
- Grease a 2-quart baking dish. Pour onion mixture into the dish, spreading evenly. Top with remaining cheeses and crushed crackers mixed with melted butter.
- Bake uncovered for 30-35 minutes until golden and bubbly.
- Remove from oven and let rest for 5-10 minutes before serving.
