- Preheat your oven to 375°F (190°C). Prepare your workspace by laying out all ingredients.
- Cut each croissant open lengthwise to create a pocket. Place them on a baking sheet lined with parchment paper.
- Spread a layer of spicy buffalo honey mustard sauce inside each cut croissant, covering both sides.
- Layer deli-sliced ham and creamy pepper jack cheese inside each croissant pocket.
- Brush the tops of the croissants lightly with melted butter and sprinkle with poppy or sesame seeds.
- Bake in the preheated oven for about 8–10 minutes, or until the cheese is melted and the tops are golden brown.
- Let the croissants cool for a couple of minutes before serving.
