Ingredients
  

For the Fish
  • 1 lb Cod Fillet skinless
  • 2 tbsp Olive Oil for marinating and cooking
  • 2 tbsp Lemon Juice fresh
  • 1 tsp Paprika smoked recommended
  • 1/2 tsp Cayenne Pepper adjust to taste
  • 1 tsp Ground Cumin
  • 1/2 tsp Salt adjust to taste
For the Creamy Sauce
  • 1/2 cup Greek Yogurt or sour cream
  • 2 tbsp Mayonnaise
For the Slaw
  • 2 cups Purple Cabbage shredded
  • 1 cup Carrots grated
  • 1 cup Frozen Corn or fresh
  • 1 small Jalapenos finely chopped
  • 1/4 cup Cilantro chopped
For the Tacos
  • 8 pieces Corn Tortillas or flour tortillas

Method
 

Instructions
  1. Whisk together olive oil, lemon juice, paprika, cayenne pepper, ground cumin, and salt. Add cod fillets and marinate for at least 30 minutes.
  2. In a bowl, mix Greek yogurt, mayonnaise, lemon juice, paprika, and salt until smooth. Refrigerate.
  3. Combine purple cabbage, carrots, corn, jalapenos, and cilantro; add lemon juice and salt. Mix well and set aside.
  4. Heat skillet over medium-high. Cook marinated cod for 3-5 minutes per side. Flake into chunks.
  5. Lightly char corn tortillas. Fill with cod, slaw, and drizzle with creamy sauce. Serve immediately.
