  • 4 cobs Corn on the Cob Freshly harvested
  • 2 tablespoons Olive Oil For brushing

For the Creamy Sauce
  • 1/2 cup Mayonnaise Use plant-based for vegan option
  • 1/2 cup Sour Cream Substitute with vegan sour cream or coconut yogurt
  • 2 tablespoons Cajun Seasoning Adjust to taste
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
For Topping
  • 1/2 cup Feta or Cotija Cheese Omit for dairy-free option
  • 1/4 cup Fresh Cilantro Chopped
  • 2 tablespoons Fresh Lime Juice
  • to taste Chipotle Powder or Chili Powder (optional)

Method
 

Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C).
  2. Shuck the corn, rinse, and pat dry. Brush each ear with olive oil and sprinkle with salt and black pepper.
  3. Grill the corn for 10 to 15 minutes, turning occasionally until golden-brown and charred.
  4. In a mixing bowl, whisk together mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
  5. Remove corn from the grill and brush with creamy Cajun sauce.
  6. Sprinkle cheese, cilantro, drizzle lime juice and optional chipotle or chili powder over the corn.
  7. Serve hot and enjoy!
