- Preheat your grill to medium-high heat, around 400°F (200°C).
- Shuck the corn, rinse, and pat dry. Brush each ear with olive oil and sprinkle with salt and black pepper.
- Grill the corn for 10 to 15 minutes, turning occasionally until golden-brown and charred.
- In a mixing bowl, whisk together mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
- Remove corn from the grill and brush with creamy Cajun sauce.
- Sprinkle cheese, cilantro, drizzle lime juice and optional chipotle or chili powder over the corn.
