Method
 

Making the Pretzel Bites
  1. In a large mixing bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Stir until a sticky dough forms; add more water if too dry.
  3. Knead the dough on a floured surface for about 5 minutes, mixing in cheddar and jalapeños until evenly distributed.
  4. Place the dough in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
  5. Preheat oven to 450°F (230°C) and bring a pot of water to a boil. Add baking soda to boiling water.
  6. Divide risen dough into golf ball-sized pieces, boil each for 30 seconds, then remove to a parchment-lined baking sheet.
  7. Brush boiled bites with egg wash and sprinkle with salt, ensuring they are spaced apart on the baking sheet.
  8. Bake for 12-15 minutes until golden brown and serve warm.
