Preparation Steps
  1. Preheat the oven to 200°C (425°F) for roasting the carrots and chickpeas.

  3. In a bowl, mix sliced carrots with maple syrup, Sriracha, salt, and olive oil. Spread on a baking tray.
  4. Roast chickpeas in the oven for 10 minutes, stir, then roast for an additional 20-25 minutes.
  5. Roast carrots for 25-30 minutes, flipping halfway until tender and caramelized.
  6. In a bowl, mix yogurt, garlic, lemon juice, and olive oil to create sauce. Let sit for 20 minutes.
  7. Assemble the dish with yogurt sauce, roasted carrots, chickpeas, and garnished with cilantro and pistachios.
