  • 1 pinch cayenne pepper omit for milder tacos
  • tortillas corn or flour varieties
For the Toppings (to taste)
  • shredded lettuce
  • diced tomatoes
  • shredded vegan cheese
  • salsa or homemade chipotle sauce

Method
 

Step-by-Step Instructions
  1. Wash and peel the potatoes, then cut them into small pieces. Soak in water for 30 minutes, then drain and pat dry.
  2. Heat olive oil in a skillet over medium heat for 2-3 minutes until hot but not smoking.
  3. Add potatoes to the pan, sprinkle with smoked paprika, onion powder, garlic powder, salt, pepper, and cayenne pepper.
  4. Cook potatoes for 15-20 minutes, stirring frequently until golden brown and crispy.
  5. Warm tortillas in a dry skillet for 30 seconds on each side.
  6. Assemble tacos with crispy potato mixture and desired toppings.
  7. Serve immediately while the potatoes are hot and crispy.
