For the Noodles & Greens
  • 5 squares Ramen Noodles Can be replaced with another noodle type.
  • 4 cups Spinach Can swap with kale or bok choy.
For the Shrimp
  • 1 pound Shrimp Opt for medium to large, peeled and deveined.
For Aromatics & Seasoning
  • 3.5 teaspoons Chili Powder Adjust according to spice preference.
  • 2 tablespoons Shallots Finely minced.
  • 1 tablespoon Ginger Freshly grated.
  • 4 cloves Garlic Minced.
  • 1/2 teaspoon White Pepper
For Toppings
  • 2 eggs Eggs Soft-boiled or poached.
  • 1 cup Carrots Julienne.
  • 1/2 cup Green Onions Sliced.
  • 2 tablespoons Sesame Seeds Toasted.
  • 2 tablespoons Hoisin Sauce Use Lee Kum Kee for best balance.

Step-by-Step Instructions
  1. Prepare Soft-Boiled Eggs: Boil water, add eggs for 6 minutes, then transfer to an ice bath.
  2. Ingredient Prep: Mince shallots, grate ginger, chop garlic, and julienne carrots.
  3. Cook Shrimp: Heat sesame oil in a pot, add shrimp and chili powder, cook for 2-3 minutes, then set aside.
  4. Make Broth: Sauté shallots, ginger, and garlic in the pot for 2-3 minutes until fragrant.
  5. Combine Broth Ingredients: Add chicken broth, lime juice, soy sauce, fish sauce, and chili powder; simmer for 10 minutes.
  6. Add Noodles and Greens: Boil broth, add ramen noodles for 2-3 minutes, then stir in spinach.
  7. Finish Cooking: Return shrimp to pot, stir gently, taste and adjust seasoning.
  8. Serve: Ladle noodles into bowls, add soft-boiled eggs, garnish with carrots, green onions, and sesame seeds; drizzle with hoisin sauce.

Notes
