Ingredients
  

For the Pasta
  • 8 oz Spaghetti Can swap with whole wheat or gluten-free.
For the Sauce
  • 4 tbsp Unsalted Butter Can substitute with olive oil for dairy-free.
  • 3 cloves Garlic Minced; fresh yields best flavor.
  • 1 pinch Red Pepper Flakes Adjust for desired heat.
  • 1 whole Lemon Juiced; fresh preferred.
For the Vegetables
  • 5 oz Baby Spinach Fresh or thawed frozen spinach.
For Finishing Touches
  • 0.5 cup Parmesan Cheese Grated; or use nutritional yeast for vegan.
  • to taste Salt Adjust according to preference.
  • to taste Black Pepper Freshly cracked is best.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add spaghetti and cook until al dente, about 9-10 minutes. Reserve 1 cup of pasta water, drain spaghetti.
  2. Melt butter in a skillet over medium heat. Add minced garlic and red pepper flakes, cooking for 30 seconds to 1 minute until fragrant.
  3. Squeeze in lemon juice and stir in reserved pasta water. Bring to a simmer and add baby spinach, stirring until wilted, about 2 minutes.
  4. Add drained spaghetti to the skillet and toss vigorously until well-coated. Add more pasta water if sauce is too thick, about 1-2 minutes.
  5. Remove from heat and stir in lemon zest and grated Parmesan cheese. Season with salt and black pepper to taste; serve immediately.

Notes
