Preparation
- Preheat your oven to 350°F (177°C) and spray a 9'x5' loaf pan with non-stick spray.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt.
- Fold in the chopped fresh strawberries, reserving a few for garnish.
- In a separate bowl, whisk together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest.
- Pour the wet ingredients into the dry ingredients and fold gently until no dry flour remains.
- Transfer the batter into the prepared loaf pan and press reserved strawberries on top.
- Bake in the preheated oven for 55-60 minutes until a toothpick comes out mostly clean.
- Remove from the oven, poke holes in the top, and prepare the lemon glaze.
- Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
