Ingredients
  

Creamy Dressing
  • 1 cup Greek yogurt Full-fat preferred
  • 2 tablespoons Extra virgin olive oil Citrus-forward oil recommended
  • 0.5 cups Fresh lemon juice From half a lemon
  • 2 cloves Garlic Minced
  • 0.5 cups Fresh mint Chopped
  • 0.5 teaspoons Kosher salt To taste
  • 1 teaspoon Freshly cracked black pepper To taste
  • 1 teaspoon Za’atar Substitute with dried oregano if needed
Cucumber Salad
  • 2 pieces English cucumber Thinly sliced
  • 1 can Chickpeas Drained and rinsed
  • 0.5 pieces Red onion Thinly sliced
  • 0.25 cups Flat-leaf parsley Chopped
  • 1 tablespoon Fresh dill Substitute with tarragon if necessary

Method
 

Preparation
  1. Prepare the Dressing: In a small bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, chopped mint, kosher salt, black pepper, and za’atar. Whisk until well blended and creamy. Set aside.

  2. Slice the Vegetables: Thinly slice the cucumbers and red onion. Place in a large mixing bowl.

  3. Add the Chickpeas and Herbs: Drain and rinse chickpeas. Add to the bowl along with parsley, mint leaves, and dill. Mix gently.

  4. Combine Dressing with Salad Mixture: Pour dressing over salad and toss until fully coated.

  5. Serve and Enjoy: Refrigerate for 15-20 minutes. Toss again before serving.
