- Prepare the Dressing: In a small bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, chopped mint, kosher salt, black pepper, and za’atar. Whisk until well blended and creamy. Set aside.

- Slice the Vegetables: Thinly slice the cucumbers and red onion. Place in a large mixing bowl.

- Add the Chickpeas and Herbs: Drain and rinse chickpeas. Add to the bowl along with parsley, mint leaves, and dill. Mix gently.

- Combine Dressing with Salad Mixture: Pour dressing over salad and toss until fully coated.

- Serve and Enjoy: Refrigerate for 15-20 minutes. Toss again before serving.
