  • 1 tablespoon Chinese Cooking Wine Dry sherry or white wine can be used as alternatives.
  • ½ teaspoon Fish Sauce Switch with soy sauce for a non-fish option.
  • 2 tablespoons Ketchup Adds a sweet and tangy layer.
  • 1 tablespoon Mustard Both Dijon and yellow mustard are excellent choices.
  • 2 tablespoons Sambel Olek Any hot sauce can be substituted.

Method
 

Step-by-Step Instructions
  1. Prep the Ribs: Remove the silver skin membrane and lightly coat the ribs with oil.
  2. Apply Dry Rub: Generously coat the oiled ribs with the dry rub and let it soak for at least 15 minutes.
  3. Wrap and Bake: Wrap the seasoned ribs tightly in aluminum foil and bake at 250°F (121°C) for 2 hours and 45 minutes to 3 hours.
  4. Make Coca-Cola Sauce: Blitz ginger, garlic, and shallots in a food processor; sauté until browned, then add sauce ingredients and simmer until thick.
  5. Combine Sauce with Ribs: Unwrap the ribs, combine the collected juice with the Coca-Cola sauce, and brush it on the ribs.
  6. Broil for Finish: Broil the coated ribs on high for 5 minutes on each side, brushing with extra sauce.
  7. Serve: Serve the ribs hot, garnished with fresh herbs if desired.
