Step-by-Step Instructions for Sweet Heat Peach Party Ribs
  1. Prepare the Ribs: Begin by slicing the spare ribs into individual servings while keeping the membrane intact for moisture retention. Pat them dry with paper towels to ensure a clean surface for seasoning and place them bone side up on a wire rack.
  2. Preheat the Smoker: Set your smoker to 250°F using peach wood chunks, allowing it to come to temperature, which usually takes about 15-20 minutes.
  3. Smoke the Ribs: Once the smoker is at 250°F, place the ribs in the smoker. Smoke for about 3 to 3.5 hours, spritzing with apple cider vinegar every 30-45 minutes.
  4. Make the BBQ Sauce: In a saucepan, combine ketchup, honey, brown sugar, peach preservative, apple cider vinegar, garlic powder, onion powder, black pepper, cayenne, and kosher salt. Simmer on medium heat for 15-20 minutes until thickened.
  5. Tenderize the Ribs: After smoking, place the ribs in an aluminum pan. Add unsalted butter and half of the BBQ sauce. Cover with aluminum foil and return to the smoker for another 30-45 minutes.
  6. Caramelize the Sauce: Remove the foil and return the ribs to the smoker. Brush with remaining BBQ sauce and smoke for an additional 20 minutes.
  7. Rest and Serve: After caramelizing, remove ribs from the smoker and let rest for 15 minutes. Slice to serve.
