Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Peel and cube the sweet potatoes, then toss with olive oil, salt, pepper, and smoked paprika until coated.
  2. Spread the seasoned sweet potatoes on a baking sheet and roast for 15 minutes. Flip and roast for another 10-15 minutes until golden.
  3. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain fat if desired and stir in taco seasoning and water. Simmer for 2-3 minutes.
  4. Assemble the taco bowl by layering roasted sweet potatoes at the bottom of a large bowl followed by seasoned beef.
  5. Top with pico de gallo, guacamole, and sour cream. Add fresh cilantro for extra flavor.
  6. Serve with lime wedges on the side for squeezing before eating.
