  • 8 ounces Spaghetti Boil until al dente

  • 2 cups Cooked Chicken Shredded, can use leftover rotisserie
  • 1 can Rotel Tomatoes 10 oz, undrained
  • 115 grams Cream Cheese Neufchâtel for lighter option
  • 3 cloves Garlic Minced
  • 1 small Onion Chopped
  • 1 cup Chicken Broth Low-sodium recommended
For the Cheese & Toppings
  • 2 cups Monterey Jack Cheese Shredded
  • 6 slices Bacon Diced
For the Cook
  • 2 tablespoons Butter Or olive oil for lighter version
  • Salt To taste
  • Black Pepper To taste

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook until al dente, approximately 8-10 minutes.
  2. In a large skillet over medium heat, add the diced bacon and cook until crispy, about 5-7 minutes.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until translucent.
  4. Add the butter, cream cheese, and chicken broth to the skillet. Stir over medium heat for 4-5 minutes until smooth.
  5. Add the undrained Rotel tomatoes to the skillet and simmer for 3-4 minutes.
  6. Stir in the shredded chicken and drained spaghetti into the sauce, cooking for an additional 2-3 minutes.
  7. Fold in half of the shredded Monterey Jack cheese, stirring until it melts.
  8. Transfer the mixture into a greased baking dish, top with the remaining cheese and crispy bacon.
  9. Preheat your oven to 350°F (175°C) and bake for about 20 minutes until bubbly.
