  • 2 cups Shredded Cooked/Roasted Chicken leftover rotisserie chicken works well
  • 1/2 cup Chopped Fresh Scallions or substitute with diced red onion
  • 1 medium Red Bell Pepper can substitute with any color bell pepper
  • 1/2 cup Chopped Peanuts use sunflower seeds for nut-free option
  • 1/4 cup Fresh Cilantro optional, can substitute with parsley
  • 1/4 cup Fresh Basil optional, can substitute with mint
  • to taste Salt & Pepper
For the Dressing
  • 1/2 cup Creamy Peanut Butter regular peanut butter is preferred
  • 1/4 cup Water adjust for desired consistency
  • 2 tablespoons Soy Sauce use low-sodium for a healthier option
  • 2 tablespoons Lime Juice fresh lime juice is preferred
  • 1 tablespoon Honey can substitute with agave nectar
  • 1 teaspoon Toasted Sesame Oil for authentic flavor
  • 1 teaspoon Grated Fresh Ginger frozen ginger is easier to grate
  • 1 teaspoon Garlic Powder or substitute with fresh minced garlic

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the creamy peanut butter, water, soy sauce, fresh lime juice, honey, toasted sesame oil, grated ginger, and garlic powder. Whisk until smooth, about 1-2 minutes.
  2. In a large mixing bowl, layer the coleslaw mix, shredded chicken, scallions, red bell pepper, and peanuts. Toss gently until evenly distributed.
  3. Drizzle the dressing over the salad mixture and toss to coat all ingredients. Adjust seasoning with salt and pepper to taste.
