For the Topping

Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. Whisk eggs and sugar together until light and fluffy, about 5 minutes.
  3. Sift in flour, cocoa powder, and salt into the egg mixture and fold gently.
  4. Spread the batter evenly on the lined baking tray and bake for 10 minutes.
  5. Once baked, cool for a minute, then roll the cake with a dusted towel.
  6. Beat mascarpone cheese and powdered sugar for the filling until smooth and fold in whipped cream.
  7. Unroll the cake, brush with coffee syrup evenly across the surface.
  8. Spread a layer of mascarpone filling, leaving a margin at the edges.
  9. Roll the cake back into log shape and dust the top with cocoa powder.
  10. Chill the cake in the refrigerator for at least one hour before serving.
