Step‑by‑Step Instructions for Pineapple Rice
  1. In a medium saucepan, heat 1 tablespoon of oil over medium heat. Add 2 cloves of minced garlic and a knob of grated ginger, sautéing for about 5 minutes, or until fragrant and golden.
  2. Stir in 1 cup uncooked white rice into the saucepan, allowing it to toast for an additional 2 minutes, stirring continuously.
  3. Add 2 cups of chopped pineapple, 1 tablespoon of sriracha, 1 tablespoon of coconut aminos, 1 teaspoon of coconut sugar, 1 teaspoon of salt, and ¼ teaspoon of red chile flakes to the rice mixture, sauté for another minute.
  4. Pour in 1½ cups of water and increase the heat to high. Bring to vigorous boil, then reduce heat to medium-low, cover and simmer for about 15 minutes.
  5. Once rice has absorbed the water, remove from heat and keep covered for an additional 5 minutes. Fluff with a fork before serving warm.
