  • 1 cup Dark Chocolate Chips (70% Cocoa) can swap with milk chocolate
  • 1 cup Graham Crackers crushed, with crumbs for coating
  • 1 cup Mini Marshmallows add more after baking for gooeyness

Method
 

Step-by-Step Instructions
  1. Cream together softened butter, light brown sugar, and granulated cane sugar in a bowl for 2-3 minutes until fluffy.
  2. Add the egg and vanilla extract, beating on low speed until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, whole wheat pastry flour, baking soda, and sea salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in dark chocolate chips, crushed graham crackers, and mini marshmallows.
  6. Scoop tablespoons of dough onto parchment-lined baking sheets, spacing about 2 inches apart.
  7. Preheat oven to 350°F (175°C) and bake for 9-11 minutes until edges are golden and centers soft.
  8. Press additional mini marshmallows on top immediately after baking.
  9. Let cookies cool on baking sheets for 5 minutes before transferring to wire racks.
