Preparation Steps
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, toss the cauliflower florets with olive oil, salt, garlic powder, and cornstarch until evenly coated. Spread in a single layer on the baking sheet.
- Roast the cauliflower for 25–30 minutes, flipping halfway through, until golden and crispy.
- Prepare the glaze by combining lemon juice, lemon zest, maple syrup, soy sauce, garlic powder, and black pepper in a saucepan. Simmer gently.
- Mix cornstarch with water to create a slurry and stir into the simmering glaze. Cook for 1–2 minutes until thickened.
- Toss the hot roasted cauliflower with the thickened glaze until well coated.
- Serve immediately, garnished with optional toppings like sesame seeds or sliced scallions.
