  • 1 head Cauliflower florets Cut into 1.5–2 inch pieces
  • 2 tablespoons Olive oil Can substitute with avocado oil
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Garlic powder Fresh minced garlic can be used
  • 3 tablespoons Cornstarch
For the Lemon Pepper Glaze
  • 2 tablespoons Lemon juice (fresh) Avoid bottled
  • 1 teaspoon Lemon zest
  • 2 tablespoons Maple syrup Agave syrup can be substituted
  • 2 tablespoons Soy sauce Tamari for gluten-free
  • 1 teaspoon Freshly cracked black pepper Coarsely ground preferred
  • 2 tablespoons Water

Method
 

Preparation Steps
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the cauliflower florets with olive oil, salt, garlic powder, and cornstarch until evenly coated. Spread in a single layer on the baking sheet.
  3. Roast the cauliflower for 25–30 minutes, flipping halfway through, until golden and crispy.
  4. Prepare the glaze by combining lemon juice, lemon zest, maple syrup, soy sauce, garlic powder, and black pepper in a saucepan. Simmer gently.
  5. Mix cornstarch with water to create a slurry and stir into the simmering glaze. Cook for 1–2 minutes until thickened.
  6. Toss the hot roasted cauliflower with the thickened glaze until well coated.
  7. Serve immediately, garnished with optional toppings like sesame seeds or sliced scallions.
