  • 4 cups Fresh Baby Spinach ensure spinach is dry to prevent sogginess

  • 1/2 cup Dried Cranberries can be replaced with dried cherries or raisins
  • 1/4 cup Sliced Almonds for nut-free version, use sunflower seeds
  • 1/4 cup Finely Chopped Red Onion use green onions for a milder flavor
For the Dressing
  • 1/4 cup Olive Oil use extra virgin for bolder flavor
  • 2 tablespoons Lemon Juice adjust to taste
  • 1 tablespoon Honey can be replaced with maple syrup for vegan option
  • 1 tablespoon Dijon Mustard use yellow mustard for a milder flavor
  • Salt and Pepper to taste for seasoning

Method
 

Steps
  1. Bring a large pot of salted water to a rolling boil. Add the whole wheat pasta and cook according to package instructions, typically 8-10 minutes or until al dente. Drain and rinse under cold water.
  2. In a small bowl, combine olive oil, lemon juice, honey, and Dijon mustard. Add salt and pepper to taste. Whisk until well combined.
  3. In a large mixing bowl, combine cooled pasta, spinach, feta, cranberries, almonds, and red onion. Gently toss to mix.
  4. Drizzle the dressing over the salad and gently toss to coat.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Before serving, give the salad a gentle toss and adjust seasoning if necessary. Garnish with additional feta and almonds.
