Method
 

Preparation

  3. Spread the sweet potato rounds on the prepared baking sheet, drizzle with olive oil and sprinkle with salt. Roast for 25–30 minutes, flipping halfway through.
  4. Allow the sweet potato rounds to cool completely on the baking sheet.
  5. In a mixing bowl, combine room temperature goat cheese and a splash of olive oil. Whip until light and fluffy, about 2–3 minutes.
  6. Stir in honey or maple syrup to taste (optional).
  7. Top each cooled sweet potato round with a spoonful of whipped goat cheese.
  8. Garnish with pomegranate arils for added flavor and color.
  9. Finish by sprinkling with fresh thyme.
