- Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, cream the unsalted butter and sugar until light and fluffy. Then, add the eggs and milk, mixing until smooth.
- Gently fold the dry ingredients into this mixture, and finally, incorporate the lemon zest and chopped strawberries.
- Prepare a mini muffin tin by greasing it lightly or lining it with mini paper liners. Spoon the batter into each muffin cup, filling them about two-thirds full.
- Place the muffin tin in your preheated oven and bake the Strawberry Lemonade Cake Bites for 12 to 15 minutes.
- Once baked, remove the tin from the oven and let it sit on a wire rack for about 5 minutes. Then transfer the bites to cool completely.
