Ingredients
  

For the Muffins
  • 2 cups Oat Flour or substitute with whole wheat or almond flour for gluten-free
  • 2 teaspoons Baking Powder must be fresh for fluffiness
  • 2 teaspoons Cinnamon for flavor
  • 1 cup Greek Yogurt or applesauce for vegan version
  • 1 large Egg can use flaxseed meal mixed with water for vegan
  • 1/4 cup Maple Syrup or substitute with honey or agave
  • 1/2 cup Milk any non-dairy milk works
  • 1 teaspoon Vanilla Extract almond extract can be used as a substitute
For the Cinnamon Swirl
  • 2 teaspoons Cinnamon use extra for more flavor
  • 2 tablespoons Maple Syrup can substitute with brown sugar

Method
 

Steps
  1. Preheat your oven to 180°C (350°F) and prepare your muffin tray.
  2. Whisk together oat flour, baking powder, and cinnamon in a large mixing bowl.
  3. In a separate bowl, mix Greek yogurt, egg, maple syrup, milk, and vanilla extract until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Create the cinnamon swirl by mixing cinnamon with maple syrup until a paste forms.
  6. Fill each muffin cup with batter, then add a swirl of the cinnamon mixture and gently swirl together.
  7. Bake in the preheated oven for about 22 minutes or until golden and a toothpick comes out clean.
  8. Cool in the tray for 5 minutes before transferring to a wire rack to cool slightly.
