Method
 

Step-by-Step Instructions
  1. Spiralize the zucchini to create zoodles and set aside to drain for 5-10 minutes.
  2. Slice the red cabbage and julienne the carrot, then chop the cilantro.
  3. Slice tempeh, marinate in soy sauce and maple syrup, then sauté until golden brown.
  4. Whisk together the dressing ingredients in a bowl until smooth.
  5. Combine zoodles, cabbage, carrot, and tempeh in a large salad bowl, then mix with dressing.
  6. Garnish with crushed peanuts and cilantro, serve with lime juice.
