Equipment

  • Oven
  • Baking Sheet
  • Parchment Paper
  • Mixing Bowl
  • Spatula

Method

Step-by-Step Instructions
  1. Start by cooking the frozen broccoli rice in the microwave according to package instructions, which usually takes about 5-6 minutes. Once done, drain any excess liquid using a fine strainer and let it cool for a few minutes.
  2. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  3. In a large mixing bowl, combine the drained broccoli rice, freshly shredded cheddar cheese, large egg, almond flour, garlic salt, and black pepper. Mix until well combined.
  4. Using your hands, take portions of the mixture and form approximately 16 small balls. Flatten each ball into a disc shape, about half an inch thick.
  5. Place the baking sheet in the oven and bake for 15 minutes, then flip each disc carefully and return them to bake for an additional 8-10 minutes until golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes on the baking sheet before serving warm with your favorite dipping sauce.
