- Start by cooking the frozen broccoli rice in the microwave according to package instructions, which usually takes about 5-6 minutes. Once done, drain any excess liquid using a fine strainer and let it cool for a few minutes.
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the drained broccoli rice, freshly shredded cheddar cheese, large egg, almond flour, garlic salt, and black pepper. Mix until well combined.
- Using your hands, take portions of the mixture and form approximately 16 small balls. Flatten each ball into a disc shape, about half an inch thick.
- Place the baking sheet in the oven and bake for 15 minutes, then flip each disc carefully and return them to bake for an additional 8-10 minutes until golden brown and crispy.
