  • 8 pieces Corn Tortillas Crisp them up by baking or frying.
  • 2 cups Rotisserie Chicken Shredded.
  • 1 packet Taco Seasoning
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Canned or frozen.
  • 1 cup Shredded Cheese For topping.
  • 1 cup Tomatoes Diced, for garnish.
  • 1/4 cup Cilantro Chopped, for garnish.
  • 1 piece Lime Cut into wedges for serving.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and arrange corn tortillas on a baking sheet, brushing both sides with oil.
  2. Bake the tortillas for about 10 minutes, flipping halfway until crispy and golden.
  3. In a medium saucepan, combine shredded chicken, salsa, taco seasoning, corn, and black beans and heat over medium for about 5 minutes.
  4. Spoon the chicken mixture over the crispy tortillas, then add shredded cheese on top.
  5. Return the baking sheet to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  6. Garnish with tomatoes and cilantro. Serve immediately with lime wedges.
