- In a mixing bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Add the peeled and deveined large shrimp, tossing them gently to coat with the marinade. Let the shrimp marinate for 10 minutes at room temperature.
- In a food processor, blend the ripe mango, lime juice, diced jalapeño, honey (if using), and a pinch of salt until completely smooth. Set aside.
- Preheat your grill to medium-high heat, around 375°F to 400°F. Lightly oil the grates to prevent shrimp from sticking.
- If using wooden skewers, soak them in water for about 30 minutes. Thread the marinated shrimp onto the skewers.
- Once the grill is hot, place the skewers onto the grill grates. Cook the shrimp for 2-3 minutes on each side, or until they turn opaque and develop grill marks.
- Remove the grilled shrimp from the skewers and drizzle the Spicy Mango Lime Coulis over the shrimp or serve on the side.
