Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F), or 200°C (390°F) for non-fan forced ovens.
  2. Lay out the two chilled sheets of puff pastry on a clean, lightly floured surface. Drizzle 1 tablespoon of honey over each pastry sheet.
  3. Sprinkle the crumbled blue cheese, grated Parmesan, and chopped walnuts across the honey-drizzled pastry. Add the fresh thyme leaves, sea salt, and cracked pepper.
  4. Starting from one edge, tightly roll each pastry sheet towards the opposite end, then cut each log in half lengthwise to reveal the filling.
  5. Twist each half to form a coil shape and place on a baking sheet lined with parchment paper.
  6. Brush the tops of each pastry coil with 1 tablespoon of milk.
  7. Bake for 25-30 minutes, or until the pastries are puffed and golden brown.
  8. Let them cool slightly on a wire rack before serving.
