- Preheat your oven to 180°C (350°F), or 200°C (390°F) for non-fan forced ovens.
- Lay out the two chilled sheets of puff pastry on a clean, lightly floured surface. Drizzle 1 tablespoon of honey over each pastry sheet.
- Sprinkle the crumbled blue cheese, grated Parmesan, and chopped walnuts across the honey-drizzled pastry. Add the fresh thyme leaves, sea salt, and cracked pepper.
- Starting from one edge, tightly roll each pastry sheet towards the opposite end, then cut each log in half lengthwise to reveal the filling.
- Twist each half to form a coil shape and place on a baking sheet lined with parchment paper.
- Brush the tops of each pastry coil with 1 tablespoon of milk.
- Bake for 25-30 minutes, or until the pastries are puffed and golden brown.
