  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes includes juice
  • 1 teaspoon dried basil or Italian seasoning
  • 1 teaspoon dried oregano or thyme
  • to taste red pepper flakes adjust for spice preference
  • 1 cup heavy cream or coconut milk for dairy-free
  • 2 cups vegetable broth or chicken broth
  • ½ cup Parmesan cheese or nutritional yeast for dairy-free
  • to taste salt
  • to taste black pepper
For Garnish
  • to taste fresh basil leaves

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium heat.
  2. Sauté the onion until translucent and fragrant.
  3. Add minced garlic and sauté until aromatic.
  4. Pour in the diced tomatoes and let simmer for 2-3 minutes.
  5. Mix in dried basil, oregano, and red pepper flakes.
  6. Season well with salt and black pepper.
  7. Pour in vegetable broth and bring to a simmer.
  8. Add the pasta, cover, and cook until al dente.
  9. Stir in heavy cream and let simmer to thicken.
  10. Add grated Parmesan cheese until melted.
  11. Adjust seasoning if necessary.
  12. Garnish with fresh basil leaves and serve hot.
