  • 2 lbs beef chuck, cut into 1-inch cubes Choose a well-marbled piece.
  • 4 slices bacon, diced For added flavor.
  • 2 cups red wine A full-bodied wine works best.
  • 2 cups beef broth Homemade or store-bought.
  • 1 lb baby carrots Helps add sweetness.
  • 1 lb mushrooms, quartered Rich in umami.
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp flour For thickening.
  • 2 tbsp olive oil For sautéing.
  • 1 tbsp fresh thyme, chopped For flavor.
  • Salt and pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, cook the diced bacon over medium-high heat until crispy. Remove and set aside.
  3. Brown the beef in the same pot, in batches if necessary. Remove and set aside.
  4. Add onion, garlic, and mushrooms to the pot, sauté until softened.
  5. Stir in flour and cook for another minute.
  6. Add the wine, scraping the bottom of the pot to deglaze, followed by the beef and bacon.
  7. Pour in the beef broth, add thyme and bay leaf, and season with salt and pepper.
  8. Bring to a simmer, cover, and transfer to the oven. Cook for 2 hours.
  9. Add carrots for the last 30 minutes of cooking.
  10. Remove from the oven, discard bay leaf, and let rest before serving.
