- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, cook the diced bacon over medium-high heat until crispy. Remove and set aside.
- Brown the beef in the same pot, in batches if necessary. Remove and set aside.
- Add onion, garlic, and mushrooms to the pot, sauté until softened.
- Stir in flour and cook for another minute.
- Add the wine, scraping the bottom of the pot to deglaze, followed by the beef and bacon.
- Pour in the beef broth, add thyme and bay leaf, and season with salt and pepper.
- Bring to a simmer, cover, and transfer to the oven. Cook for 2 hours.
- Add carrots for the last 30 minutes of cooking.
- Remove from the oven, discard bay leaf, and let rest before serving.
