  • 1 medium Yellow Bell Pepper
  • 1 medium Cucumber Julienne for easier rolling; can substitute with zucchini or carrot strips
  • 1 cup Shredded Carrot
  • 1 cup Shredded Purple Cabbage Gives fun texture and color
For the Fruit Coins
  • 1 medium Kiwi Cut into rounds
  • 1 medium Banana Slice into rounds, add lemon juice to prevent browning
  • 1 cup Strawberries Thickly sliced
  • 1 cup Mandarin Orange Segments Fresh or canned in juice
  • 1 tablespoon Lemon To squeeze over the fruit

Method
 

Step-by-Step Instructions
  1. Warm the tortillas in the microwave for 10 to 15 seconds. Spread about ¼ cup of hummus or cream cheese on each, leaving a 1-inch border.
  2. Layer sliced red and yellow bell peppers, julienned cucumber, shredded carrots, and purple cabbage on the bottom edge of each tortilla.
  3. Gently fold in the sides and roll tightly from the bottom edge to form pinwheels.
  4. Slice the rolls into 1-inch thick pinwheels using a serrated knife.
  5. Prepare fruit coins by slicing kiwi, banana, and strawberries into rounds, tossing them in lemon juice.
  6. Assemble your Bento by placing veggie pinwheels in one compartment and fruit coins in another.
