Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, crack 3 eggs and add salt, black pepper, and mirin. Whisk until well combined.
  2. Heat a nonstick skillet over medium heat for about 2 minutes. Add vegetable oil and coat the bottom of the skillet.
  3. Add diced zucchini and chopped scallions to the skillet. Sauté for about 2 minutes until tender.
  4. Introduce chopped kimchi to the pan and stir. Sauté for an additional minute.
  5. Pour egg mixture over the sautéed ingredients. Cook undisturbed for 2 minutes.
  6. Cover the skillet with a lid and cook for another 2 minutes until set.
  7. Gently fold the omelet in half and cook for another minute for preferred texture.
  8. Slide the omelet onto a plate and serve, optionally with extra kimchi.
