Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine olive oil, minced garlic, dried herbs, salt and pepper. Add the chicken thighs or drumsticks and marinate for at least 30 minutes.
  2. While chicken is marinating, mix breadcrumbs and grated Parmesan cheese in a shallow dish. Add additional dried herbs.
  3. Coat each marinated piece of chicken in the breadcrumb mixture, pressing gently to adhere.
  4. Heat oil in a large frying pan until it reaches 350°F (175°C). Fry each piece for about 6–8 minutes on each side until golden brown and cooked through.
  5. Transfer fried chicken to a paper towel-lined plate to drain excess oil.
  6. Serve hot with mashed potatoes, salad, or dipping sauces.
