- In a medium bowl, combine olive oil, minced garlic, dried herbs, salt and pepper. Add the chicken thighs or drumsticks and marinate for at least 30 minutes.
- While chicken is marinating, mix breadcrumbs and grated Parmesan cheese in a shallow dish. Add additional dried herbs.
- Coat each marinated piece of chicken in the breadcrumb mixture, pressing gently to adhere.
- Heat oil in a large frying pan until it reaches 350°F (175°C). Fry each piece for about 6–8 minutes on each side until golden brown and cooked through.
- Transfer fried chicken to a paper towel-lined plate to drain excess oil.
- Serve hot with mashed potatoes, salad, or dipping sauces.
