Step-by-Step Instructions for Spinach Pie
  1. Thaw puff pastry and spinach by refrigerating the pastry and microwaving the spinach until fully thawed.
  2. Preheat your oven to 375°F (190°C).
  3. Sauté diced onion and minced garlic in olive oil for about 5 minutes until softened.
  4. Combine cottage cheese, grated Parmesan, nutmeg, salt, and pepper in a large mixing bowl. Add two eggs and mix well.
  5. Fold the cooled onion and garlic mixture into the cheese mixture. Then, stir in the drained spinach.
  6. Roll out the puff pastry to about 10x10 inches on a floured surface.
  7. Drape the rolled pastry over a 9-inch pie plate. Fill with spinach mixture and fold the edges around the filling.
  8. Whisk together one egg and brush it over the pastry edges.
