- Thaw puff pastry and spinach by refrigerating the pastry and microwaving the spinach until fully thawed.
- Preheat your oven to 375°F (190°C).
- Sauté diced onion and minced garlic in olive oil for about 5 minutes until softened.
- Combine cottage cheese, grated Parmesan, nutmeg, salt, and pepper in a large mixing bowl. Add two eggs and mix well.
