Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Roll out the partially thawed puff pastry to about 1/8 inch thick and cut out 16 rounds using a round cutter.
  3. Pierce each pastry round with a fork to allow steam to escape, then transfer them to the prepared baking sheets.
  4. Spread a thin layer of Dijon mustard on each pastry round and sprinkle Manchego cheese on top.
  5. Slice tomatoes into thin rounds, blot with paper towel, and place one slice on each cheese-covered pastry.
  6. Drizzle olive oil over each tartlet and season with salt and pepper.
  7. Bake in the preheated oven for about 30 minutes until golden brown and bubbly.
  8. Remove from oven, cool briefly, and garnish with chopped chives before serving.
