- Roll out the partially thawed puff pastry to about 1/8 inch thick and cut out 16 rounds using a round cutter.
- Pierce each pastry round with a fork to allow steam to escape, then transfer them to the prepared baking sheets.
- Spread a thin layer of Dijon mustard on each pastry round and sprinkle Manchego cheese on top.
- Slice tomatoes into thin rounds, blot with paper towel, and place one slice on each cheese-covered pastry.
- Drizzle olive oil over each tartlet and season with salt and pepper.
- Bake in the preheated oven for about 30 minutes until golden brown and bubbly.
- Remove from oven, cool briefly, and garnish with chopped chives before serving.
