Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped cauliflower, bell peppers, zucchini, onion, and minced garlic. Drizzle with olive oil and toss until coated.
  3. In a separate bowl, whisk together the eggs and cheddar cheese until creamy.
  4. Carefully fold the cheese and egg mixture into the prepared vegetables.
  5. Grease a casserole dish with olive oil and pour the vegetable and cheese mixture into it.
  6. Bake in the preheated oven for 30-35 minutes, until golden brown.
  7. Let the casserole cool for about 5-10 minutes before serving.
