- Preheat your oven to 375°F (190°C).
- Rinse the cauliflower under cool water and pat dry.
- Place the cauliflower stem side up in a Dutch oven or baking dish.
- In a medium bowl, combine olive oil, grated parmesan, melted butter, garlic, smoked paprika, dried thyme, salt, and black pepper. Whisk until well combined.
- Brush half of the seasoning mixture under the cauliflower.
- Carefully flip the cauliflower and brush the remaining seasoning on top and sides.
- Cover the Dutch oven or baking dish and bake for 30 minutes. Then raise the oven temperature to 425°F (220°C) and continue baking for another 15 minutes.
- Allow the cauliflower to cool slightly before transferring it to a cutting board and slicing into wedges.
